Bell Pepper & Assorted Vegetables Salsa .

1 each of medium sized red and yellow pepper , cut into 3/4" bits . ( seeds removed )
1 medium to large onion , peel and cut into four , separate the ' leaves ' .
1 large tomato , cut like the peppers .
1 medium sized zucchini cut into 1/2 " thick discs .
6-8 cloves of garlic chopped thick .


The Dressing





3 Tablespoons Balsamic Vinegar .
2 Tablespoons light Soy Sauce .
1 Tablespoon extra virgin olive oil .
1/2 teaspoon coarse freshly ground black pepper .
Mix the sauce and the vegetables . Cook in a wok or pan , but ensure its tightly covered so that the vegetables cook in their own juices - about 40 minutes . Add water as and when needed . The peppers should be near soggy .

When done add ( optional ) any parboiled greens .
If you are serving this as a salad at room temperature you can add some bocconcini or feta cheese as in the picture .If serving hot skip the cheese as It will melt and ruin the freshness of the dish .

This is a very flavoursome and wholesome dish . Should be made in advance , flavors develop and blend beautifully .
