Asparagus with Strawberries Salad
Select straight, firm, uniformly sized asparagus spears with closed tips . Cut off the tough or woody ends of asparagus spears , and using a vegetable peeler peel off the tough skin from the bottom towards just under the spears .Blanche asparagus in ample sugared water - sugar retains the green color - a teaspoon is enough . Boil for 30 seconds , drain and plunge into iced water to stop the cooking . The asparagus should be crunchy .
Clean and halve the strawberries . Take half the quantity and liquidise with a few cloves of garlic and a tablespoon of balsamic vinegar . Add salt .
Arrange asparagus , spoon the half the liquidised asparagus dressing randomly to dress and decorate . Arrange the balance strawberries in the center of the plate and pour the rest of the dressing onto them . Chill and serve .

The strawberry is tiny but mighty. It's packed with nutrition and flavor. An excellent source of potassium and magnesium , they have more vitamin C than citrus fruit !
